Mediterranean Sauerkraut Salad

Guys, I know this salad is weird. But I’m literally OBSESSED with it. I can accept if it’s not for you but I will beg you to at least try it. It’s SO good for your gut health - the arugula helps to detoxify the body and the sauerkraut if full of gut-loving bacteria. I really feel like this salad is the perfect mid-day energizer. Plus it only takes maybe 3 minutes to throw together (plus another 10 if you want to add salmon!). Give it a try and let me know what you think!!

 

Mediterranean Sauerkraut Salad

SERVES 1

1 large handful of arugula
1/4 cucumber, diced
5-6 green olives, pitted and cut in half
2 tbsp of Sauerkraut
Handful of Marcona Almonds
Sprinkling of feta cheese
Drizzle of high quality EVOO
1 Salmon Filet (optional)


 

Directions

  1. Combine all ingredients in a bowl & drizzle with a high quality extra virgin olive oil.

  2. If you want to add some extra protein and top with salmon, you can use this recipe for perfect cast iron salmon!
