Cast Iron Salmon

I don’t eat a ton of animal products (just a personal choice - you choose what is best for you!!), but I cannot resist a good piece of salmon. My dad is a pro at cooking salmon on the grill and he taught me how to buy & prepare the perfect filet. I can’t grill in my condo, but I find that salmon in the cast iron is the next best thing.

I personally believe it’s important to buy salmon ethically - buy wild-caught if it’s available to you, but if not make sure you get salmon that’s sustainably farm-raised without any additives. Previously frozen is completely fine! Try to choose a piece that’s an even thickness all the way through - that’ll allow it to cook up nicely without worrying about parts being overdone & underdone.

 

 

Cooking salmon on the cast iron will make you feel like you’re eating at a world-class restaurant - it will have a perfectly crispy crust and the buttery, tender inside. I love it as a main with some brussels sprouts and potatoes or on top of a kale and sweet potato salad. I hope you love it!

Cast Iron Salmon

INGREDIENTS

  • Salmon filet (preferably at room temperature) 

  • Olive oil

  • Salt & Pepper

Directions

  1. Preheat the oven to 425.

  2. Heat the cast-iron skillet over medium-high heat. Add 1 tbsp of olive oil.

  3. Salt & pepper salmon to your liking - I tend to go heavy with the seasoning here.

  4. Once the cast iron is thoroughly heated, add salmon skin side up (pink side down) and allow to cook for 2-3 minutes. You’ll see the salmon begin to form a golden crust - let it keep cooking and don’t try to check on it, otherwise, it might stick. 

  5. Take the cast iron off the stovetop and directly in the oven. Allow salmon to finish cooking, about 8 minutes. Keep a close eye on the salmon, cook time will depend on your oven - once the edges are lightly golden it should be done. 

  6. Take the salmon out of the oven and take off the skin before serving. The top will have a dark, crispy crust and the inside should be nice and buttery.
