Cruciferous Veggie Pasta

I love this recipe (originally adapted from Goop) on nights when I want something healthy but am also craving something a little more filling. It’s packed with lots of veggies and is super versatile. You can use anything veggies you have in your fridge, but I personally love this combo. The Brussels & kale (cruciferous veggies, hence the name!) have a really beautiful flavor when they’re pan fried and the red pepper adds a nice bit of sweetness.

Another reason I love this recipe is because cruciferous veggies are great for women to add into their diet to help with estrogen detoxification and rebalance hormones.

Cruciferous Veggie Pasta

SERVES 3

INGREDIENTS
- 1 pack of Banza pasta
- A handful of Brussels sprouts, finely diced
- A handful of chopped kale
- A head of broccoli, broken into pieces
- A diced red bell pepper
- 6-7 cloves of garlic, finely diced
- Olive oil (I used one for cooking + a nicer one for finishing)
- Himalayan Sea Salt
- Lemon
- Aleppo Pepper

Directions

1. First you’ll want to prep all your veg - this dish takes no time at all so it’s easier to have it all ready!

2. While you’re prepping, go ahead and boil some water and cook the pasta, 6-7 minutes or until al dente.

3. Drain the pasta & drizzle with olive oil to prevent sticking.

4. Start sautéing your veggies. I start with the brussel sprouts - add a decent amount of oil to the pan (1 tbsp) and turn the heat on medium-high. Add the Brussels and cook until they get brown & fragrant.

5. Salt & Remove from pan. Do the same for the broccoli.

6. Remove broccoli from the pan and reduce to a low-medium heat.

7. Add another tbsp of oil to the pan and add your garlic. Then add red bell pepper & sauté for another minute or two.

8. Add the pasta, broccoli, Brussels and kale. Sauté until combined.

9. Top with lemon zest, a good bit of salt, Aleppo pepper and a high quality olive oil to finish. Enjoy!
