The Best Beet Salad (even if you hate beets)

Alright, hear me out on this one. I know you’re probably not the biggest fan of beets. I never liked beets either because I always thought they tasted too much like dirt. Turns out, I just never had a properly cooked beet. Now I am OBSESSED.

I originally made this salad because my skin was acting up and I knew every single ingredient would work to clear up my skin from the inside out and hydrate it on a cellular level. This was definitely one of those “food as medicine” meals. And then I took a bite and realized it was actually one of the BEST salads I’ve ever made. The combination of the beets with the tangy balsamic and creamy avocado is out of this world. This is a regular on my spring / summer rotation because it’s light & satisfying without bogging me down. The Best Beet Salad (even if you hate beets)

FOR THE SALAD

2 cups chopped Romaine
1 Salmon filet
1/4 cucumber, diced
1 medium beet
½ Avocado
Hemp seeds
Walnuts

FOR THE DRESSING

6 tbsp olive oil
6 tbsp balsamic vinegar
1 tbsp dijon mustard
1 tbsp Agave (or any other sweetener)
2 cloves of garlic, minced
Salt & Pepper to taste

Directions

  1. Preheat oven to 400.

  2. Wrap beet in aluminum foil, place on a sheet try and place in oven for about 45 minutes, until a fork can easily slide in. Remove beet and allow to cool. (I like to roast 2 or 3 beets at a time because they’ll save well in the fridge for a week).

  3. Allow beets to cool while you cook the salmon (recipe here).

  4. Once beets are cool, rinse under water and rub off the outer layer of skin (the beet will “bleed” - don’t be alarmed. Just wash your hands after and don’t let it get on the countertop.)

  5. Cut beet, cucumber and avocado into bite-sized pieces and place on top a big bed of romaine leaves (wash the cutting board right after after you cut the beets to prevent staining)

  6. Add salmon, walnuts and hemp seeds. Drizzle on the dressing and serve immediately!
