Veggie Tacos with Romesco Sauce
Who doesn’t love tacos!? I really start to crave tacos in the spring when the world feels like it’s coming back to life. Feels like a good excuse to eat in the sunshine with a margarita in hand, right?! This recipe was inspired by BarTaco’s cauliflower taco - it’s super simple and perfect for a weeknight dinner or quick Sunday lunch.
The beautiful thing about veggie tacos is you really can’t mess them up and there’s endless combinations to try. Try caramelized onions, sautéed peppers or switching up the veggies you roast for a completely different meal - you really can’t go wrong! Plus the romesco sauce is to die for and saves for 2 weeks - I put it on quinoa bowls, breakfast scrambles and will use it as a dip with crackers for a mid-afternoon snack!
Veggie Tacos with Romesco Sauce
FOR THE TACOS
Siete Tortillas (or brand of your choice)
1 large Sweet Potato
1 bag Cauliflower Rice
Cilantro
Lime
Guacamole or Avocado
FOR THE ROMESCO SAUCE
1 jar roasted bell pepper (16 oz)
1/4 cup tomato puree
2 cloves garlic
1 tsp smoked paprika
1/4 cup toasted hazelnuts
1/2 cup toasted almonds
1/2 cup olive oil
1 tsp sherry vinegar
a few drops of hot sauce
salt & pepper to taste
Directions
Preheat oven to 400.
Wash & peel sweet potato and dice into 1 inch cubes. Place on a lined baking sheet and coat with olive oil and salt. Roast for 30 minutes or until soft & lightly brown.
While the sweet potatoes are cooking, make the romesco sauce. Place almonds & hazelnuts on a separate baking sheet and place in the oven for about 8 minutes, or until fragrant.
Remove the toasted nuts and allow to cool.
Place all the ingredients for the sauce in a blender and pulse until a chunky sauce forms.
Next, heat up the cauliflower rice by placing in a pan with a little olive oil and salt over medium high heat - sauté until rice begins to turn golden brown.
Assemble your taco! Heat up the tortilla and top with cauliflower rice, sweet potatoes, guacamole, romesco sauce, cilantro and a squeeze of lime. Enjoy!
