Vegan Patatas Bravas

Unfortunately for me, I used to be afraid of potatoes because diet culture told me they were “carbs” or “bad”. Thank GOD I got over that because 1) my body actually thrives on potatoes & carbs and 2) these patatas bravas are literally the most delicious side in the world. You can quote me on that, I won’t be changing my mind.

These are a crowd pleaser for anyone, vegan or not. You could definitely use regular mayo for the aioli if you’d prefer, for some reason regular mayo just freaks me out. Give these a try and let me know how you like them!!

 

Vegan Patatas Bravas

SERVES 4 AS A SIDE

FOR THE POTATOES
1.5 lb bag of small yellow potatoes
Olive Oil
Salt
Garlic Powder
Aleppo Pepper
Smoked Paprika
Parsley

FOR THE GARLIC AIOLI
1/2 cup vegan mayo (I like Primal Kitchen Avocado Oil Mayo)
1.5 tbsp lemon juice
2 cloves of minced garlic
1/8 tsp of salt

 

Directions

  1. Preheat the oven to 425.

  2. Add 1 lb of small yellow potatoes to a pot of boiling water and boil for about 10 minutes, or until tender enough to poke with a fork.

  3. Strain the potatoes and allow them to cool for 15 minutes, or until cool enough to handle.

  4. Cut the potatoes into quarters and add to a lined baking sheet. Coat with olive oil (about 2 tsp), salt and garlic powder (about 1/2 tsp).

  5. Roast the potatoes for 25-30 minutes, flipping half way through to ensure even cooking.

  6. While the potatoes are roasting, make the aioli. Combine 1/2 a cup of vegan mayo (I like @primalkitchen avocado oil mayo), 1.5 tbsp of lemon juice, 2 cloves of minced garlic and 1/4 salt. Stir until well combined.

  7. Remove the potatoes from the oven and assemble.

  8. Add the garlic aioli to the bottom of the plate, then top with potatoes, Aleppo pepper (mildly spicy), smoked paprika and parsley.

  9. Enjoy right away!
