Summertime Peach Salad

If you live in Nashville like me, you know that peach season is easily the best season of the year. Nothing can replace the joy of a ripe peach from The Peach Truck and I feel like I have an obligation to eat as many as possible while they’re good. Hence incorporating them into every meal I eat.

This salad takes less than 5 minutes to throw together and really allows the flavors of the season to speak for themselves. Try it out and I promise this will be on constant rotation for the foreseeable future.

 

Summertime Peach Salad

INGREDIENTS (FOR 1 SALAD)

FOR THE SALAD
large handful of arugula
1-2 ripe peaches
1/2 an avocado
mozzarella pearls
toasted slivered almonds

FOR THE DRESSING
6 tbsp olive oil
2 tbsp apple cider vinegar
4 tbsp balsamic vinegar
3 tsp dijon mustard
3 tsp maple syrup or any sweetener you like
2 cloves of garlic, minced
Salt & Pepper to taste

 

Directions

  1. Toast your slivered almonds if you haven’t already - heat them up over medium heat on a pan and stir continuously until golden brown and fragrant. Remove from heat and allow them to cool.

  2. Next, make the dressing. Just throw all the ingredients into a small jar and shake until incorporated. Set aside while you assemble the salad.

  3. Wash the arugula and place on a large plate.

  4. Wash and cut the peaches and add on top of the arugula.

  5. Finish assembling with half an avocado, mozzarella pearls to your liking, and a generous handful of toasted almonds. You could also top with hemp seeds for some extra protein and omegas.

  6. Drizzle over the dressing and enjoy!
