Poolside Watermelon Salad

There’s really nothing better than biting into a fresh, juicy watermelon in the heat of the summer. This salad gives that same satisfaction, but with a salty twist to satisfy that mid-day pool lunch. It’s easy to make and easy to take on the go for a day at the pool or on the lake. Plus, it’s super hydrating and will keep you from getting dehydrated in that summer sun!

PS - This salad will save well in the fridge, just be sure to drizzle the balsamic right before eating!

 

Poolside Watermelon Salad

INGREDIENTS (FOR 1 SALAD)

2 cups of cubed watermelon
1 large heirloom tomato
1/2 English cucumber
1/4 cup basil
1/4 cup mint
1/4 cup of feta
balsamic vinegar
sea salt

 

Directions

  1. Cube a watermelon and set aside about 2 cups per salad.

  2. Wash & cut an heirloom tomato into similar size chunks as the watermelon and add to the plate.

  3. Cut 1/2 and English cucumber into similar sized pieces and add.

  4. Thinly slice up your basil & mint and add to salad. Top with feta.

  5. Drizzle a little balsamic vinegar over the top of the salad and sprinkle on some sea salt. Enjoy!
