A Healthier Caprese Salad

There’s something about summertime that screams Caprese salad. I love a classic Caprese as an appetizer in the evening, but it’s usually not hearty enough to fill me up for lunch. That’s where this salad comes in. Inspired by a classic Caprese, I’ve just added romaine and toasted almonds to make it feel like a complete meal. The romaine adds some good fiber & hydration to the meal, and I love the crunch the almonds give. And be sure you’re getting some fresh, local heirloom tomatoes and high quality olive oil and balsamic. It may be simple, but with quality ingredients you don’t need much more!

 

A Healthier Caprese Salad

INGREDIENTS

1-2 cups of romaine lettuce
1 large Heirloom tomato
Fresh Mozzarella (approx 1/3 cup)
1/4 cup of toasted almonds
2 tbsp of shredded basil
Extra virgin olive oil
Balsamic Vinegar

Directions

  1. Start by toasting the almonds if you don’t have toasted almonds on hand. Add a bag of slivered almonds to a pan over medium heat and stir continuously until fragrant & golden brown (about 5 minutes). Remove from pan & set aside to cool.

  2. Rinse & shred 1-2 cups of romaine lettuce, depending on how big of a salad you want.

  3. Chop the tomato, mozzarella, and basil and add on top of the lettuce.

  4. Add toasted almonds once cooled (I love to be extra generous with the almonds).

  5. Drizzle extra virgin olive oil & balsamic vinegar (roughly 1 tbsp each).

  6. Top with a little sea salt & enjoy immediately.
