Energizing Breakfast Hash

Gwyneth Paltrow calls this a boyfriend breakfast, I call this heaven on a plate. This is the perfect weekend brunch because it doesn’t take much time, but it tastes like you’ve been slaving away for hours. Plus it’s packed with fiber, protein, healthy fats and slow burning carbs to keep you energized all day long. It really is everything you could want in a savory breakfast.

Energizing Breakfast Hash
Serves 2-3

INGREDIENTS
1 Yellow Onion
1 Red Bell Pepper
1 Medium / Large Sweet Potato
2-3 Cups of Spinach
3 Eggs
1 Avocado
Green Onion to top

 

Directions

  1. Preheat Oven to 375

  2. Place a cast iron skillet over low-medium heat and add a tablespoon of olive oil.

  3. Thinly slice a yellow onion and add to the cast iron. Stir every few minutes as it begins to caramelize.

  4. Bring a pot of water to a boil.

  5. Peel & dice a medium sweet potato and place in boiling water for 7 minutes, or until slightly tender.

  6. While the sweet potato is boiling add a diced red pepper to the caramelizing onions.

  7. Once the sweet potatoes are tender drain them and add to the cast iron (and add a little more oil if needed).

  8. Raise the heat to medium-high and allow the potatoes to brown a bit, stirring every few minutes for about 10 minutes. Add a decent amount of salt & pepper.

  9. Add a few handfuls of spinach and stir until it wilts.

  10. Create 3 wells in the veggie mixture and crack an egg in each.

  11. Cook on the stovetop for 2 minutes, then place the pan in the oven for 6-8 minutes, or until eggs are cooked to your liking.

  12. Top with scallions & avocado.
