Gut-Loving Simple Salad

I’m convinced this salad really does it all - and it takes less than 3 minutes to put together. What more could you ask for!? Now I’m not saying this is my favorite salad of all time, but it is a go-to for it’s ease and benefits. It’s great for your gut health, it’s hydrating and it’s got plenty of beautifying nutrients like anti-inflammatory omegas, iron and sulfur.

Since this salad isn’t super filling, I typically eat it when I’m craving something a little heartier and pair it with a sandwich at lunch or pasta for dinner. That way I know I’m getting some great nutrients in but I can still eat what I’m craving. Try it out and let me know what you think!

Gut-Loving Simple Salad

INGREDIENTS
Handful of your favorite greens
Half a cucumber
Handful of cherry tomatoes
About 1/4 cup Sauerkraut
1 tbsp pumkin seeds
1 tbsp hemp seeds
Drizzle of Extra Virgin Olive Oil

 

Directions

  1. Rinse & chop half a cucumber and a handful of cherry tomatoes.

  2. Add a handful of your favorite greens to a small bowl (I love arugula!)

  3. Add the cucumbers, tomatoes, sauerkraut, pumpkin seeds and hemp seeds.

  4. Top with a little extra virgin olive oil and a bit of sea salt. Simple as that!
